Last minute deals are currently hard to find as cruising has become so popular and so sailing are at capacity so cruise lines don't have last minute cabins to fill.   Your best bet is off peak times and the very beginning and ends of seasonal itinerary.   They do exist with all the companies but it is very sailing specific.     

The other important thing to note is now the cruise lines start the 'last minute deals' right after final payment so usually 90 days out.    the days of finding a deal in the days or even 2 weeks before a sailing are pretty much done, usually your only hope is a cancellation at that time and because of demand they may not discount it much.

@Woody14 Thanks for this! Last minute deals have been harder to find than decades past. Some cruise lines will naturally have more options than others, but you are very right about cruises sailing almost at capacity every time. Cruise lines are recouping their money right now for sure. Cruising at capacity wasn't always a thing back in the day, but it certainly is now. 

That's a good tip about the 90-day out rule. That means booking last minute really means last minute! You have to be ready to jump on a cruise at any moment if you find a good deal.
